Instructions

    Add the eggs, ground flaxseed, and avocado oil to a blender. Blend until completely smooth and let rest 2-3 minutes — the flax will thicken the batter.

    Lightly grease a 9-inch glass pie plate.

    Pour about 1/6 of the batter into the pie plate and tilt to spread it into an even layer covering the bottom.

    Microwave on high for 30-60 seconds, until the wrap is set and lightly puffed — the microwave creates air bubbles that make the wrap lighter than a stovetop version. Check at 30 seconds and add time as needed; microwaves vary.

    Carefully peel the wrap out of the pie plate and transfer to a plate. Repeat with the remaining batter, stacking the cooked wraps as you go.

    Use immediately or store between parchment sheets in an airtight container — refrigerate up to 3 days.
