    Toast the guajillo and ancho chiles in a dry skillet over medium heat for 1-2 minutes per side until fragrant. Remove stems and seeds, then soak in hot water for 10 minutes. Drain.

    Blend the soaked chiles with the orange juice, lime juice, soy sauce, fish sauce, avocado oil, brown sugar, garlic, chipotle peppers, cumin, coriander, cilantro, and salt until smooth.

    Place the skirt steak in a shallow dish or zip-lock bag and pour the marinade over it. Marinate in the refrigerator for at least 2 hours, or up to 8 hours.

    Remove the steak from the marinade and pat lightly dry. Let sit at room temperature for 20 minutes.

    Heat a grill or cast-iron skillet over high heat until very hot. Cook the steak for 3-4 minutes per side for medium-rare, or until desired doneness.

    Transfer to a cutting board and rest for 5 minutes. Slice thinly against the grain and serve.
