Instructions

    Drain the black beans, reserving about 1/2 cup of the liquid.

    Finely dice the white onion.

    Heat a skillet or medium pot over medium heat. Add the diced onion and cook for 4-5 minutes until softened.

    Add the drained beans and salt to the pan. Cook for 2-3 minutes, stirring to heat through.

    Mash the beans with a potato masher, fork, or immersion blender to your preferred texture — traditional refried beans are partially mashed, not smooth. Add reserved bean liquid a little at a time if they get too thick.

    Cook another 2-3 minutes, stirring, to thicken to your liking.

    Season with additional salt to taste. Serve warm.
