Instructions

  1. 1

    1. Set oven to 350°F. Coat a 9 x 11-inch glass baking dish with cooking spray.

  2. 2

    2. Warm oil in a skillet over medium heat. Sauté chopped onion and garlic until golden, about 5 minutes.

  3. 3

    3. Mix ketchup, mustard, molasses, paprika, garlic powder, and onion powder in a bowl.

  4. 4

    4. Combine the sautéed onion and garlic with the beans in the prepared dish. Pour the sauce over and stir. Bake 15 to 20 minutes until heated through and edges brown slightly.

  5. 5

    5. While the beans bake, coat a 12-cup muffin tin with cooking spray.

  6. 6

    6. In a bowl, combine all-purpose flour, whole wheat flour, cornmeal, baking powder, and salt.

  7. 7

    7. Zest the orange to get 1 tablespoon of peel and finely mince it.

  8. 8

    8. Whisk together buttermilk, eggs, brown sugar, mashed banana, and minced orange peel.

  9. 9

    9. Add the wet mixture to the dry ingredients and stir until just combined—do not overmix or muffins will toughen.

  10. 10

    10. Fill muffin cups 3/4 full with batter. Bake 15 to 20 minutes until golden on top and a toothpick inserted in the center comes out clean.

  11. 11

    11. Remove muffins from the oven and cool on a wire rack.

  12. 12

    12. Serve the muffins with the baked beans.
