    1. Shred the zucchini into a large bowl.

    2. Add the eggs, chopped onion, herbs (if using), flour, baking powder, and grated Parmesan to the bowl. Stir until combined.

    3. Heat the oil in a medium skillet over medium-high heat.

    4. Measure 1/4 cup of the zucchini mixture and transfer it to the skillet. Gently press down with a spatula to flatten.

    5. Cook for about 2 to 3 minutes until the bottom is lightly browned, then flip and cook the other side for another 2 to 3 minutes until lightly browned.

    6. Transfer to a plate and repeat with the remaining batter.
