Vegetarian Sushi Roll

1. Wash the brown rice thoroughly and drain well. In a saucepan over medium heat, combine the rice with water.

2. Bring the mixture to a boil, then reduce heat to low and simmer until all water is absorbed, about 45 minutes.

3. Stir the rice vinegar and sugar into the hot cooked rice. Let cool.

4. Slice the carrot and cucumber lengthwise into 8 thin strips each. Remove and discard the seeds from the cucumber strips.

5. Halve the avocado, remove the pit and skin, then cut each half into 8 slices.

6. Lay a nori sheet flat in front of you. Spread the rice evenly over the bottom two-thirds of the sheet.

7. Arrange a line of spinach leaves (or sprouts) along the bottom edge of the rice.

8. Layer 2 cucumber strips, 2 carrot strips, and 4 avocado slices on top of the greens.

9. Wet the top edge of the nori sheet lightly.

10. Roll the sheet tightly from the bottom upward, pressing the wet edge to secure.

11. Repeat steps 6-10 with each remaining nori sheet.

12. Cut all rolls into thick pieces using a sharp knife. Sprinkle with sesame seeds if desired.
