1. Pour the oil into a large pot and set the heat to medium-high.

2. When the oil is hot, add the sausage, onion, peppers, corn, celery, and garlic. Sauté for 5 minutes, stirring often, until the vegetables just begin to soften.

3. Add the broth, tomatoes, tomato sauce, bay leaf, chili powder, red pepper flakes, and oregano, then bring everything to a boil.

4. Once boiling, lower the heat and keep the mixture simmering uncovered for 10 minutes, stirring every couple minutes.

5. Mix in the rice, place a lid on the pot, and continue simmering for another 10 minutes with occasional stirring.

6. Add the chicken strips, keep the lid in place, and cook for 5 more minutes until the chicken is fully cooked (internal temperature 165°F) and the rice is tender.

7. Remove the pot from the heat, keep it covered, and let everything rest for 10 minutes. Before serving, remove the bay leaf.
