1. Add the rinsed dried lentils and water to your slow cooker.

2. Stir in the diced celery, carrot, onion, and sweet potato.

3. Add the minced garlic, dried oregano, dried thyme, bay leaf, salt, and pepper.

4. Cover and cook on low for 6 to 8 hours, until the lentils are fully tender.

5. If using hardy greens like kale or chard, add them with 30 minutes remaining in the cooking time.

6. For delicate greens such as spinach, stir them in at the very end and cover the pot for 5 minutes to let them soften.
