    1. Heat 1 teaspoon of the oil in a medium skillet over medium-high heat. Add the mixed vegetables and sauté until tender, about 3-4 minutes. Transfer to a bowl.

    2. Add the remaining teaspoon of oil to the skillet. Crack the eggs into the pan and stir constantly over medium heat, cooking until the whites start to turn opaque, about 1-2 minutes.

    3. Pour in the sautéed vegetables and continue stirring gently until the eggs are fully cooked and the yolk is firm, about 1-2 minutes more.
