Brown Rice Sushi

1. Measure 3 cups of brown rice. Rinse under water and drain.

2. Cook in a rice cooker with 3 cups of water according to the manufacturer's instructions for brown rice.

3. Transfer the cooked rice to a large pan or tray.

4. Add 4 tablespoons of rice vinegar and 1 teaspoon of sugar. Mix well.

5. Wash the cucumbers and pickled daikon. Cut the daikon into 6 long strips and cut each cucumber into 6 long strips.

6. Cut the avocado in half, remove the skin and pit, and cut each half into 6 slices.

7. Bring water to a boil in a pot. Add the shrimp and cook until they turn pink. Set aside.

8. Place a nori sheet horizontally on your work surface or a bamboo rolling mat.

9. Spread the cooked rice evenly over the nori sheet.

10. Arrange 2 cucumber strips, 2 daikon strips, 2 avocado slices, and 2 shrimp in a line across the center of the rice.

11. Roll the nori up tightly using the rolling mat. Cut the roll into pieces approximately 3/4 inch wide.

12. Arrange the sushi on a serving plate and garnish with sesame seeds if desired.

13. Repeat steps 8-12 with the remaining 2 nori sheets.
