1. Combine the milk, pumpkin, cinnamon, and salt in a medium saucepan.

2. Place over medium heat and bring to a boil.

3. Reduce heat slightly. Add the polenta gradually while stirring constantly to prevent lumps from forming. (The hot liquid may splatter, so proceed carefully.)

4. Lower the heat to a simmer and cook for 20 minutes, stirring every few minutes, until the polenta is very thick.

5. If the mixture thickens too much during cooking, add more milk as needed.

6. Remove from heat and stir in the butter and maple syrup or honey if using.
