1. Warm the olive oil in a large pot over medium heat.

2. Add the onion wedges and cook until they soften slightly, about 3 minutes.

3. Stir in the minced garlic, ground coriander, and cayenne. Cook for about 2 minutes.

4. Add the chicken strips and cook until they're lightly golden, approximately 5 minutes.

5. Pour in the stock, minced fresh tomato, chopped carrots, potato pieces, and salt. Bring to a boil, then reduce heat to low and simmer for 15 minutes.

6. Gently stir in the peas, artichoke hearts, olives, and half the cilantro. Simmer for about 10 minutes, or until the chicken reaches 165 degrees Fahrenheit internally and vegetables are tender.

7. Move the tagine to a serving platter. Top with the remaining cilantro, squeeze lemon juice over it, and serve.
