1. Blanch the sliced bitter melon in boiling water until tender, about 2 to 3 minutes. Drain well.

2. Warm the olive oil in a skillet over medium heat.

3. Cook the diced onion in the hot oil until softened, about 5 minutes.

4. Stir in the crushed garlic and let it cook for 2 minutes longer.

5. Add the ground pork and cook, breaking it apart, until it reaches 160°F internal temperature (no longer pink).

6. Pour in the shrimp and cook until they reach 145°F internal temperature, about 5 minutes.

7. Stir in the chopped tomato, blanched bitter melon, and soy sauce. Mix well and heat through for about 1 minute.
