1. Whisk soy sauce, vegetable broth, rice vinegar, sesame oil, and cornstarch together in a bowl. Set aside.

2. Heat canola oil in a large wok or skillet.

3. Add celery, leeks, carrots, and bell pepper. Stir occasionally until they begin to soften, about 2 minutes.

4. Stir in broccoli, bok choy, Swiss chard, Napa cabbage, and kohlrabi. Cook for 3 minutes.

5. Move vegetables to the sides of the wok, leaving the center clear. Add garlic and ginger to the center and cook for 30 seconds. Stir to combine with the vegetables.

6. Pour the sauce over the vegetables and stir together. Cook for 1 minute.
