1. Place cellophane noodles in a bowl and cover with hot water. Let sit for 20 minutes until softened. Drain well and cut the noodles into shorter pieces.

2. Heat vegetable oil in a large skillet or wok over medium-high heat.

3. Add the diced onion and sauté for 3 minutes, stirring occasionally, until it softens and becomes translucent.

4. Stir in the grated ginger and minced garlic. Cook for about 30 seconds until fragrant.

5. Add the ground turkey, breaking it apart with a spoon as it cooks. Continue cooking for about 5 minutes until the meat is golden brown throughout.

6. Add the diced carrots, celery, sliced cabbage, and peas to the skillet. Toss everything together and cook for 5 minutes.

7. Pour in the chicken broth, water, and soy sauce. Stir well to combine.

8. Add the cut noodles to the skillet and stir. Cook for about 5 minutes until the noodles are tender and most of the liquid has been absorbed. If the noodles are still firm, add a bit more water and continue cooking.
