Tortilla Pizzas

1. Wet one side of each of two tortillas with water and press them together with the wet sides meeting in the middle, forming a sturdy layered base.

2. Coat both outer surfaces with a light amount of oil or margarine. Fry them in a medium-hot skillet over medium-high heat until both sides turn golden and crisp, about 3-4 minutes per side. Move to a plate and continue with the remaining tortilla pairs.

3. In a medium saucepan, combine the refried beans, onion, and half of the green chili peppers. Heat over medium, stirring occasionally, until warm. Remove from heat.

4. Distribute roughly 1/3 cup of the bean mixture across each tortilla base.

5. Drizzle 1 tablespoon of red taco sauce over the top of each base.

6. Add 1/2 cup of chopped vegetables and 1 teaspoon of the remaining chili peppers to each base.

7. Top each with 1 tablespoon of shredded mozzarella cheese.

8. Put the assembled pizzas back in the skillet and heat over medium until the cheese melts, about 1-2 minutes.

9. If desired, top with fresh cilantro.
