Cauliflower Tacos

1. Heat oven to 400°F.

2. Cut cauliflower into small florets.

3. Add unpeeled garlic cloves and cauliflower to a roasting pan.

4. Drizzle with olive oil.

5. Add paprika, cayenne pepper, salt, and black pepper. Mix with hands until everything is evenly coated.

6. Roast for 45 minutes to 1 hour, until cauliflower is as crispy as desired.

7. Press roasted garlic out of skins and discard the skins.

8. Heat tortillas in microwave for 20-30 seconds or in the warm oven covered with a towel while you assemble.

9. Place two tortillas on each plate and top with roasted cauliflower and garlic.

10. Add grated cheese and salsa on top.
