Instructions

  1. 1

    1. Preheat your oven to 350°F.

  2. 2

    2. Soften the unsalted butter either at room temperature or by microwaving it in a microwave-safe bowl for 10-15 seconds (do not melt it).

  3. 3

    3. In a large bowl, combine the softened butter, white sugar, and brown sugar, mixing with a rubber spatula or fork until light and creamy.

  4. 4

    4. Crack the egg into the bowl and add the nonfat milk and vanilla extract, stirring until smooth.

  5. 5

    5. Add the whole wheat flour, salt, and baking soda to the bowl, stirring just until combined without overmixing.

  6. 6

    6. Fold in the quick-cooking rolled oats and your choice of mix-ins: chocolate chips, chopped nuts, or chopped dried fruit.

  7. 7

    7. Coat a baking sheet lightly with nonstick cooking spray.

  8. 8

    8. Scoop 1 tablespoon of dough for each cookie and roll it into a ball with your hands.

  9. 9

    9. Arrange the dough balls on the baking sheet, spacing them 2 inches apart.

  10. 10

    10. Bake for 8-10 minutes, until the bottoms are lightly browned.

  11. 11

    11. Remove from the oven and let the cookies sit on the baking sheet for 2-3 minutes to firm up.

  12. 12

    12. Transfer to a cooling surface and let cool completely.

  13. 13

    13. Repeat steps 8-12 with any remaining dough.

  14. 14

    14. Baking time may vary depending on your oven, so watch closely to prevent burning.
