Finely dice the white onion.

Heat a large skillet over medium heat. Add the diced onion and cook for 4-5 minutes until softened and translucent.

Add the riced cauliflower to the skillet. Cook for 5-6 minutes, stirring occasionally, until the cauliflower starts to soften.

Stir in the tomato paste and cook for another 2-3 minutes, coating the cauliflower evenly and letting the tomato paste caramelize slightly.

Add the green peas (frozen is fine — they will thaw in the pan). Stir and cook for 2-3 more minutes until everything is heated through.
