Sort and rinse the dried Great Northern beans. Cover with water and soak overnight (or do a quick-soak: boil 2 minutes, then let sit 1 hour).

Drain and rinse the soaked beans.

Dice the carrots, celery, and white onion into small pieces. Dice the ham.

Add the beans, ham, carrots, celery, and onion to a large pot. Cover with water by about 2 inches.

Bring to a boil, then reduce to a simmer. Cover partially and cook for 60-90 minutes, stirring occasionally, until the beans are tender. Add more water if the pot gets dry.

Once the beans are tender, stir in the ground flaxseed and simmer another 5 minutes — it will thicken the broth.

Season with salt and pepper to taste. Serve hot.
