Instructions

    Rinse the dried black beans and soak in cold water overnight, or quick-soak by covering with water, bringing to a boil for 2 minutes, then letting sit for 1 hour. Drain and rinse.

    Dice the onion and jalapenos. Mince the garlic.

    In a large pot over medium heat, sauté the onion and jalapenos until softened, about 5 minutes. Add the garlic and cook 1 minute more.

    Add the drained beans and enough water to cover by 2 inches (about 8 cups). Bring to a boil, then reduce heat to low.

    Simmer uncovered for 1½–2 hours until the beans are completely tender, adding water as needed to keep the beans submerged.

    Season generously with salt. For a thicker soup, use an immersion blender to partially blend, leaving some beans whole.
