Instructions

  1. 1

    1. Rinse the green onions and bell pepper. Peel the garlic clove.

  2. 2

    2. Slice the green onions thinly. Remove the core from the bell pepper and dice it. Mince the garlic.

  3. 3

    3. Shred the cheese.

  4. 4

    4. Drain and rinse the beans in a colander.

  5. 5

    5. Heat the oil in a medium skillet over medium heat. Add the beans, green onions, bell pepper, and garlic. Cook until the peppers soften, about 3 minutes.

  6. 6

    6. Stir in 1/2 teaspoon of the cumin and all the black pepper. Transfer the mixture to a plate.

  7. 7

    7. Crack the eggs into a small bowl. Add the remaining 1/4 teaspoon cumin and beat lightly with a fork.

  8. 8

    8. Wipe out the skillet with a paper towel and coat with cooking spray. Heat at medium-low. Pour in the egg mixture and cook, stirring occasionally, until the eggs reach your desired firmness, about 3 to 5 minutes.

  9. 9

    9. Divide the cooked eggs among the four tortillas, spooning them down the center of each. Top with the bean-and-vegetable mixture and the shredded cheese.

  10. 10

    10. Fold each tortilla over and serve.

  11. 11

Note: If you double this recipe, do not increase the cumin—use 3/4 teaspoon total instead of 1.5 teaspoons.
