Preheat oven to 375°F. Grease a 9x13 baking dish.

Dice the bell peppers and white onion.

Add the cottage cheese, eggs, and nutritional yeast to a blender and blend until smooth.

Pour into a large bowl and whisk in the chia seeds.

Fold the green peas, bell peppers, onion, and baby spinach into the egg mixture.

Pour into the prepared baking dish.
