1. Heat a skillet over medium-high heat and lightly oil or butter the cooking surface.

2. Warm the two 6-inch corn tortillas in the pan for about 1 minute until pliable, then transfer to a paper towel.

3. In a small bowl, whisk the eggs with milk or water, salt, and black pepper.

4. Pour the egg mixture into the warm skillet and cook, stirring frequently, until the eggs are cooked through and no longer wet, about 5 minutes.

5. Divide the cooked eggs between the two warm tortillas, add black beans, cheese, and optional meat to each, then fold in half.
