1. Wash your hands with soap and water.

2. In a pot, combine instant brown rice, reduced-sodium chicken broth, minced dehydrated onion, garlic powder, ground ginger, red peppers, peeled and diced sweet potato, diced tomatoes with their liquid, and salt.

3. Bring to a boil over medium-high heat. Reduce heat to medium-low, cover, and simmer for 10 minutes.

4. Stir in creamy, reduced-fat peanut butter and non-fat milk until well combined. Return to a gentle simmer, uncovered, and cook for 5 minutes.

5. Stir in coarsely chopped baby spinach and cook until wilted, about 2 to 3 minutes. Remove from heat.

6. Divide among bowls and top with roasted, chopped peanuts and thinly sliced green onions if desired.
