    1. Thoroughly wash your hands with soap and water.

    2. Heat the oil in a skillet over medium heat. Add the chopped onion and cook until soft, about 3–4 minutes. (If preferred, cook the onion together with the vegetables.)

    3. Add the vegetables to the skillet. Cook fresh vegetables until tender, or heat frozen or leftover vegetables through. Drain away any excess liquid.

    4. Preheat the oven to 350°F. Prepare a round pie pan or 8 x 8-inch baking dish with a light coating of oil.

    5. Transfer the vegetables to the prepared pan. Top with the shredded cheese.

    6. In a separate bowl, combine the milk, eggs, and baking mix. Stir until smooth. Pour over the vegetables and cheese.

    7. Bake for 35 minutes until the center is set and reaches 160°F when measured with a food thermometer, and a knife inserted into the center comes out clean.
