Drain the tuna.

Finely dice the bell peppers. Thinly slice the green onions, white and green parts.

In a large bowl, combine the drained tuna, ground flaxseed, eggs, lemon juice, dijon mustard, bell peppers, and green onions. Mix thoroughly with a fork, breaking up the tuna as you go.

Let the mixture rest 5 minutes — the flaxseed will absorb moisture and help bind the patties.

Form the mixture into 6 equal patties, about 1/2 inch thick.

Heat a nonstick skillet over medium heat. Lightly grease if needed.

Cook the patties for 3-4 minutes per side until golden brown and heated through.

Season with salt and pepper to taste. Serve immediately with lemon wedges, or over greens.
