    2. Halve the yams and boil them until tender but firm, about 20 minutes.

    3. Once cool enough to handle, peel them and cut into slices ¼ inch thick.

    4. Mix together the brown sugar, flour, salt, cinnamon, and orange peel.

    5. Spread half of the yam slices in a medium casserole dish.

    6. Sprinkle half of the sugar mixture over them.

    7. Dot with half of the margarine.

    8. Add the remaining yam slices as the second layer.

    9. Sprinkle the remaining sugar mixture over the yams.

    10. Dot with the remaining margarine.

    11. Pour the orange juice over the dish.
