    1. Combine the sugar and water in a pot. Heat over medium-high until the mixture reduces to a heavy, glossy syrup.

    2. Wash the winter squash, peel it, and remove the seeds. Cut into pieces.

    3. Add the squash pieces to the syrup. Cook, stirring occasionally, until the squash is very soft and most of the syrup has soaked into it.

    4. Transfer to a serving plate. Top with the walnuts and cinnamon if desired.
