    1. Clean your hands thoroughly with soap and water.

    2. Place the chicken pieces in a large pot and add the 8 cups of water. Reduce heat to medium and simmer for 1 hour.

    3. Stir in the onion, pepper, chili powder, tomato sauce, and oregano.

    4. Once the chicken reaches an internal temperature of 165°F, carefully remove the pieces from the pot. Pick out and discard most of the bones, keeping only the meat in the pot.

    5. Return the deboned chicken meat to the pot.

    6. Drain and rinse the hominy, then add it to the pot. Continue simmering for 45 minutes more.

    7. Ladle into bowls, top each with shredded lettuce, and serve with a lime wedge.
