1. Wash your hands thoroughly with soap and water.

2. Bring 10 cups of water to a boil in a large pot over high heat.

3. Add the egg noodles and cook for 5 to 7 minutes until softened. Drain thoroughly and set aside.

4. Heat a non-stick wok or large skillet over high heat and add 1/2 tablespoon of oil, tilting to coat the bottom and sides.

5. Place the noodles in the wok and cook for 7 to 10 minutes, stirring occasionally, until they develop a golden-brown color. Transfer them to a clean plate.

6. Add the remaining 1/2 tablespoon of oil to the wok.

7. Add the bean sprouts, bamboo shoots, shredded carrots, shiitake mushrooms, and green onions to the wok.

8. Stir-fry over high heat for 5 to 7 minutes until the vegetables soften slightly but remain somewhat crisp.

9. Return the noodles to the wok with the vegetables.

10. Sprinkle the salt, sugar, and soy sauce over the noodles and vegetables.
