    2. In a large pot over medium-high heat, combine the chopped onion, minced garlic, and drained diced tomatoes. Stir frequently for about 3 minutes until the onion begins to soften.

    3. Add the drained black beans, diced potatoes, and water. Stir well to combine.

    4. Bring the mixture to a boil, then reduce the heat to low-medium. Cover and simmer gently for 20 minutes, stirring occasionally.

    5. Stir in the cumin powder, chopped cilantro, and squeezed lime juice. Continue simmering uncovered for another 10 minutes.
