    1. Wash your hands with soap and water.

    2. Combine the cream cheese and garlic powder in a small bowl.

    3. Spread about 2 tablespoons of the cream cheese mixture on each of the 8 tortillas.

    4. On one half of each tortilla, layer about 2 tablespoons of the chopped red pepper and 2 tablespoons of the shredded low-fat cheese.

    5. Add spinach to each tortilla: use 1/4 cup fresh spinach leaves, or 2 tablespoons thawed frozen spinach (squeezed dry).

    6. Fold each tortilla in half.

    7. Warm a large skillet over medium heat.

    8. Place 2 folded tortillas in the skillet. Cook for 1 to 2 minutes on each side until golden brown.

    9. Transfer the cooked quesadillas to a platter. Cover with foil to keep them warm while you cook the remaining tortillas.

    10. Cut each quesadilla into 4 wedges and serve while still warm.
