Sesame-Seared Tuna

    1. Combine soy sauce, sesame oil, mirin, and honey in a small bowl.

    2. Transfer half of this to a separate bowl, whisk in the rice wine vinegar, and set aside as the dipping sauce.

    3. Put sesame seeds on a plate.

    4. Brush the tuna steaks with the remaining soy sauce mixture, then press them firmly into the sesame seeds to coat.

    5. Heat the olive oil in a cast iron skillet over high heat until it shimmers and smokes slightly.

    6. Sear the steaks for about 30 seconds on the first side, then flip and sear the other side for about 30 seconds.

    7. Serve the steaks with the reserved dipping sauce.
