Instructions

  1. 1

    1. Warm 1 teaspoon olive oil in a large skillet over medium heat.

  2. 2

    2. Add the mushrooms and sauté, stirring occasionally, until soft, about 5 to 7 minutes. Transfer to a bowl and set aside.

  3. 3

    3. Pour the remaining 2 tablespoons olive oil into the skillet and heat over medium.

  4. 4

    4. Place each pork chop in the oil and cook 3.5 to 5 minutes per side until the surface browns. Transfer to a plate.

  5. 5

    5. Pour off most of the oil, keeping about 1 tablespoon in the pan.

  6. 6

    6. Add the onion and garlic to the skillet. Cook, stirring, for about 5 minutes until the onion turns translucent.

  7. 7

    7. Add the tomatoes and their juice, then stir in the basil, oregano, salt, and pepper.

  8. 8

    8. Return the pork chops to the skillet, lower the heat, and simmer for approximately 45 minutes until the meat is tender and cooked through. Use a meat thermometer to verify the internal temperature reaches 145°F. If the mixture seems dry, pour in the water.

  9. 9

    9. Lay one green pepper slice on each pork chop and add the reserved mushrooms to the pan.

  10. 10

    10. Continue cooking for 5 to 10 minutes until the peppers become tender.

  11. 11

    11. Transfer to a serving dish and enjoy.
