Vermicelli Pudding

A creamy, mild, and comforting pudding made of vermicelli (angel hair) pasta lightly spiced with cardamom and a few raisins is a beloved traditional food for Eid breakfast. It's good served warm or chilled.

Ingredients

  • Milk, reduced fat, fluid, 2% milkfat, with added vitamin A and vitamin D946g
  • Sugar, white, granulated or lump62.5g1.25 × 1/4 cup
  • Pasta, white, dry225g1.75 × cup elbows

Instructions

    1. Pour the milk into a saucepan and add the white sugar and cardamom seeds.

    2. Bring the mixture to a boil over medium-high heat.

    3. Reduce heat to medium-low and simmer for 5 minutes.

    4. Stir in the broken vermicelli pasta and raisins.

    5. Continue simmering until the pasta becomes tender and the mixture thickens, about 5 minutes more.

    6. Remove from heat and let the pudding rest for about 15 minutes until it reaches a warm temperature.
