Instructions

    Preheat oven to 375°F.

    Finely dice the white onion. Slice the mushrooms.

    Heat a skillet over medium heat. Add the onion and mushrooms and cook 6-8 minutes until softened and any mushroom liquid has evaporated.

    Add the riced cauliflower to the skillet and cook another 5-6 minutes, stirring, until tender and excess moisture has cooked off.

    While the vegetables cook, blend the cottage cheese until smooth and creamy.

    Drain the tuna.

    In a large bowl, combine the cooked cauliflower-mushroom-onion mixture, drained tuna, green peas (frozen is fine), and blended cottage cheese. Stir to mix evenly.

    Season with salt and pepper to taste.

    Transfer to an oven-safe baking dish. Bake for 20-25 minutes until heated through and lightly golden on top.
