Instructions

    Preheat oven to 375°F. Grease a 9x13 baking dish.

    Dice the white onion. Cook the turkey chorizo in a skillet over medium heat, breaking it apart, until cooked through, about 8 minutes. Drain excess fat.

    Add the cottage cheese, eggs, and nutritional yeast to a blender and blend until smooth.

    Pour into a large bowl and whisk in the chia seeds.

    Drain and rinse the black beans. Finely chop the chipotle peppers.

    Fold the chorizo, black beans, onion, and chipotle peppers into the egg mixture.

    Pour into the prepared baking dish.

    Bake for 35–40 minutes until the center is set and the edges are lightly golden. Let rest 5 minutes before slicing.
