Instructions

    Drain the canned salmon well. Remove any large bones if desired (the soft bones are edible and a great calcium source; pick them out if you prefer smooth patties).

    In a large bowl, combine the drained salmon, ground flaxseed, eggs, lemon juice, and dijon mustard. Mix thoroughly with a fork, breaking up the salmon as you go.

    Let the mixture rest 5 minutes — the flaxseed will absorb moisture and help bind the patties.

    Form the mixture into 8 equal patties, about 1/2 inch thick.

    Heat a nonstick skillet over medium heat. Lightly grease if needed.

    Cook the patties for 3-4 minutes per side until golden brown and heated through.
