Instructions

    Drain the garbanzo beans, reserving about half the liquid. Set the remaining liquid aside in case you want it later for consistency.

    Peel the garlic cloves and crush them with the side of a knife.

    Combine the drained garbanzo beans, crushed garlic, and the reserved half of the bean liquid in a microwave-safe bowl. Microwave for 2-3 minutes to infuse the garlic flavor into the beans and liquid. Let cool slightly.

    Add the bean-garlic mixture, tahini, and ground flaxseed to a blender or food processor. Blend until smooth, adding a little of the remaining reserved liquid if needed to reach your preferred consistency.

    Season with salt to taste. Blend again briefly to incorporate.

    Wash the carrots and cut into sticks for dipping.

    Transfer the hummus to a serving bowl and serve with the carrot sticks.
