Salmon Patties with Flax

Salmon is one of my favorite types of fish to eat and also very healthy. I am very lucky to live close to Lake Michigan so fresh Salmon from the lake is readily available. I can also buy locally smoked salmon with all kinds of flavor profiles. My two favorites are cherry wood smoked and maple bacon. They are unbelievably good. I could easily eat a whole filet if I’m not careful. Fresh and smoked salmon is an infrequent luxury purchase for me though. Fresh Salmon is usually around $12 a pound and smoked is about $17.
I make these salmon patties with canned salmon. I add flaxseed to the mix as a binder and nutrition. They aren’t as tasty as the Salmon I buy fresh but they are a really delicious, portable, and nutritious lunch option. Each serving has 1/3 pound serving has only 190 calories with 26.5 grams of protein! The Salmon and flaxseed also have high levels of Omega-3 fatty acids. The Salmon is also a great source of Vitamin D with 14 mg per serving. This recipe is affordable too, costing me only $1.83 per patty. They are also east to make. Start to finish I have about 15 minutes of hands on time including cleanup. This recipe was a great choice for my lunch this week. I hope you enjoy it too and as always Eat With Love!
