Egg Casserole – Chorizo
March 7, 2026
This is the 3rd week in a row I planned egg casserole for breakfast but I am changing it up. The blended mix of eggs, cottage cheese, chia seeds, and nutritional yeast has worked really well as a binder and the bulk of the dish. These four ingredients also provide a really solid nutritional base with almost 26.5 grams of protein, most of the way to my 30 gram target for breakfast. This mix also pairs well with a wide variety of flavor combinations so I can be creative.
I decided to create a Mexican inspired casserole this week. I was inspired when I saw Chorizo on sale at the grocery store. I prepped cooked chorizo, black beans, and chopped white onions to stir into the blended mix but I thought it could still use a little more flavor. I like a little heat and chipotles are one of my favorite types of chiles. I blended some canned chipotles in adobo sauce into the base mix to liven it up. The finished casserole is a gorgeous burgundy color when it comes out of the oven thanks to the adobo sauce. I ate it by itself but it would also go well with some guacamole or homemade salsa. Enjoy and as always Eat With Love!
